First, a dose of reality: when I make these lists, I'm lucky if I'm able to make 3 or 4 of the recipes that week. Eventually, I usually try all of them... but life gets in the way (lots of orders to sew, a fussy baby, Shawn home late from work, etc.) and they don't always get done in the same week. We end up eating eggs, green smoothies or frozen pizzas (for Shawn) and Amy's organic frozen meals (for me) fairly often.
But here's to hoping that these week's recipes work out - because they look so yummy!
Tuesday: Slow Cooker Barbacoa tacos
Wednesday: Healthier lasagna (using gluten-free lasagna noodles)
Thursday: Chipotle lime salmon, quinoa, spinach salad
For us, it's a money thing. The more we stick to the menu plan, the less money we spend. So, I be sure to choose about 3 meals that are quick and EASY! We have church on Wednesday night and leave as soon as my husband gets home from work. So I actually put on the menu: frozen pizza and chicken fries! On Saturday, I can spend more time so I'll choose a more involved recipe that day. If you are doing menu plans for the sake of trying out different recipes, then keep going :) If you're doing it budgeting, they put easy meals in your weekly plans so account for those crummy days where you can't spend time cooking. I have 4: and sometimes I think "Holy moly what was I thinking?" But I wouldn't trade em for anything! lol

DeleteThe sweet potato chili is amazing! If you soak the potatoes over night the chili gets thicker and more "chili" texture.

DeleteI am the same way. I meal plan for a week and the meals end up lasting me two weeks because not every night goes as planned, so it stretches it out. So fewer trips to the grocery store, but more eating out/picking something up/eating breakfast for dinner than planned. But in this season (work & school fulltime), there are other areas I'm thankful to be able to stay on top of. Some days you just have to give yourself grace. :)

ReplyDeleteI've rearranged them a bit and we had the barbacoa tacos tonight... SO good. I would totally make them again (and it makes enough meat for days) and Shawn loved them. We also had the lasagna and I subbed in chicken sausage for the ground sirloin and we both said it was the best lasagna we've ever had! 2 for 2 so far. :)
