You know those German roasted nuts they sample and sell at the mall? I can never pass them up... the smell is overwhelmingly good and they taste just like they smell. Yum.

I found a recipe for them online and altered it a bit, and the results were just perfect. A coworker even said they taste just like Christmas. What a compliment! (I've already made a second batch in the span of 2 days.) I used a 2-lb. bag of pecans from Costco, but feel free to change the quantity or even the kind of nut you use.

Ingredients:
3 egg whites
2 teaspoons vanilla
2 tablespoons water
2 pounds pecan halves
2 cups sugar
1 teaspoon salt
1 tablespoon ground cinnamon
A pinch of nutmeg

Directions:
1. Preheat oven to 250 degrees. Line two baking sheets or roasting pans with aluminum foil. (It makes for easy cleanup.)
2. In a large mixing bowl, whisk together egg whites, vanilla, and water until frothy. In a smaller bowl, mix together sugar, salt, cinnamon, and nutmeg.
3. Add pecans to egg whites and stir to coat them evenly. Then add sugar mixture and toss nuts to coat them. Spread the nuts on prepared baking sheets.
4. Bake at 250 degrees for 1 hour. Stir every 15 minutes.

And that's it! Let them cool, and if you're giving them as gifts, you can find these little gift bags at Hobby Lobby or Joann's. Wouldn't these be cute to bring by with your Christmas card?

  2. Oooo! You know, I've never seen those nuts anywhere besides Opry Mills, but there they were always tantalizing temptations which I, too, could never pass by without having a sample of. Thanks for this recipe!
